Frozen Banana Ice Cream

This is a one ingredient recipe and with the addition of a few pantry stables can be turned into many new flavours. This soft serve ice cream is healthy enough to eat for breakfast – there is no heavy cream or added sugars It’s fat free, dairy free, vegan, paleo and gluten free.

Start with 2-3 over ripe bananas, peel and cut them into thick slices, place them in a zip lock bag and into the freezer. To make the soft serve ice-cream, throw the banana pieces into a blender or food processor and start blending. It may take a few minutes, but then suddenly the magic happens! You end up with a rich and silky ice cream perfect for the family on a hot day.

Get the kids involved and try these mix-in’s to make it even more awesome.

– 2 tablespoons of peanut butter (the ones with no added sugar, just a pinch of salt)
– drizzle of honey
– a couple of tablespoons of cocoa powder/chocolate chips
– a teaspoon of your favourite spice e.g. cinnamon, cardamom or ginger
– sprinkle of roasted almonds

The possibilities are endless, best yet, you can make a big batch of frozen bananas, and enjoy it any time.
